Position Overview
We are seeking an experienced and passionate Sushi Chef to join our culinary team. The ideal candidate will possess exceptional knife skills, deep knowledge of traditional and modern Japanese cuisine, and a strong commitment to quality, presentation, and customer satisfaction. You will be responsible for preparing sushi, sashimi, rolls, and other Japanese dishes while maintaining the highest standards of food safety and cleanliness.
Key Responsibilities
Prepare and craft high-quality sushi, sashimi, nigiri, maki, and specialty rolls according to menu standards.
Ensure freshness, proper portioning, and artistic presentation of all dishes.
Select, handle, and store seafood and other ingredients safely and efficiently.
Maintain cleanliness and organization of the sushi bar and prep areas.
Collaborate with kitchen and service staff to ensure a seamless dining experience.
Monitor inventory levels, assist with ordering, and minimize food waste.
Uphold all food safety, hygiene, and sanitation standards (e.g., HACCP).
Engage with customers (if applicable) to provide excellent service and share knowledge of Japanese cuisine.
Innovate and contribute to menu development and seasonal offerings.
Qualifications
Proven experience as a Sushi Chef or in a similar role in a Japanese or Asian-fusion restaurant.
In-depth knowledge of sushi preparation techniques, knife handling, and ingredient sourcing.
Understanding of food safety regulations and allergen management.
Strong attention to detail and commitment to consistency and quality.
Excellent communication and teamwork skills.
Ability to work in a fast-paced environment while maintaining composure.
Culinary certification or apprenticeship in Japanese cuisine preferred (but not required).
Physical Requirements
Ability to stand for extended periods and perform repetitive motions.
Comfortable working with raw seafood and sharp kitchen tools.
Ability to lift up to 25 lbs occasionally.
